- For best taste use a charcoal grill. To me there is a difference between how food taste that is cooked over coals compared to gas or wood.
- Never ever spray lighter fluid on the grilling surface when starting your fire. If you do, all of your food will likely taste like lighter fluid. Remove the cooking grates and spray fluid directly on charcoal.
- Alway trash the leftover coals from the previous grilling before adding new charcoal. You don’t want the old soot or ash flying up into your food.
- Cook your hot dogs, burgers and smoke sausages first. It doesn’t take these items long to cook. Get these on and cooked and it will give people something to snack on while everything else is cooking.
- Wait until charcoal briquettes start turning white before you place food on the grill.
- Keep a water hose nearby in case you have an unexpected flame flare up. No one wants burnt food.
- Only put BBQ sauce on the food when it is almost done and still on the grill. Once the grilled item is almost ready to be taken off, brush your sauce on the meat while on the grill so it can get that caramelization effect.
